Completes the central shared-variable documentation from #496.
docs/role-elasticsearch.mdto the centralroles/elasticstack/README.md.docs/role-elasticsearch.mdto a redirect, consistent with the otherdocs/role-*.mdfiles (the interim shared-variable list it held now lives onlyin the elasticstack README).
