docs: sync router deployment addresses

Summary

• Update Ring Swap v2 UniversalRouter deployment rows to match the current Ring Interface SDK V2_0 address map.
• Clarify that v2 deployment rows are Ring Swap router addresses, while the v4 deployment page lists Uniswap v4 infrastructure routers.
